The Chef of the restaurant Le Siècle reveals his recipe for chocolate cake
At the Le Siècle restaurant, Chef Cyril Breteau creates dishes with Mediterranean flavors, prepared with fresh, seasonal products. But he also thought of the most gourmands with a tasty dessert menu : Rosemary crème brûlée, rose glazed macaroon or even lemon ginger dome. Moreover, today he is revealing the recipe for his chocolate cake which will undoubtedly win all the votes! A lactose-free recipe (without butter) which is replaced by zucchini puree. And it’s stunning.

Recipe for chocolate cake by Chef Cyril Breteau
For 6/8 people:
- 200 gr of dark chocolate (65% mini)
- 4 eggs
- 1 zucchini (200g)
- 100 g of sugar
- 60 gr of flour
To make the Le Siècle recipe:
- Preheat the oven to 180° (Thermostat 6/7)
- Melt the chocolate in a bain-marie
- Whisk the eggs with the sugar
- Wash and dice the zucchini
- Blend in a food processor to obtain a puree.
- Mix the melted chocolate with the eggs and sugar, then add the zucchini puree!
- Add the sifted flour and mix.
Put everything into a buttered and floured mold then bake for about 20 minutes. Leave to cool, unmold then serve with a scoop of vanilla ice cream for even more flavors… enjoy your meal!
